I've often explained the kitniyot thing as "ashkenazic insistence on making ourlives more difficult." Re expanding kashrut, I kinda do the ingredient-kosher thing during passover and between the high holy days, and have been increasingly boggled by the things that seem to, over time, get added to the kitniyot list. Like mustard.
